Use this spreadsheet to compare two gluten-free bread recipes and come up with your own. It even has a table to calculate the correct proportions of pre-made flour blends for your recipe.
It’s a manual process to add the ingredients and develop your own, but it calculates the total weight of each category in each version and helps you adjust the ingredients to create your own bread recipes.
This spreadsheet is pre-populated with my own Gluten-Free Pumpernickel Bread for the Bread Machine recipe as an example, and there is a blank template to use for your own recipes. Complete instructions are included in the file.
