Use this spreadsheet to compare two GF bread recipes and come up with your own. It even has a calculation table to calculate the correct proportions of pre-made flour blends. It’s a manual process to add the ingredients and develop your own, but it calculates the total weight of each category in each version and helps you adjust and create your own recipes.
This spreadsheet is pre-populated with my own Gluten-Free Pumpernickel Bread for the Bread Machine recipe as an example, and there is a blank template to use for your own recipes. Complete instructions are included in the file.
